Stew Jerk Chicken
Stew Jerk is a Jamaican spiced stew with chicken or beef, flavored with smoky, spicy jerk seasoning, usually served with rice or bread.

Ingredients
- 10 Chicken Thighs Bone-in
- 6 TBSP Maureens Jerk Sauce - marinate
- 125g Green Onions, diced
- 75g Cilantro, diced
- 3 Cloves of Garlic, diced or minced
- 2 TBSP Avocado Oil
- 1 1/2 TBSP Brown Sugar
- 2 TBSP Soy Sauce
- 1 TBSP Fresh Tyme (or 1 TSP Ground Thyme)
- 2 TSP Tomato Paste
- 1 Smal Tomato, diced
- 125ml Water
- 250ml Water
- Salt N Pepper (to taste)
- Lime
Cooking Instructions:

In a large bowl or ziplock bag, add Chicken, Jerk, green onions, garlic, and cilantro. Use utensil or massage the bag to mix the ingredients. Massage all the aromatics and Jerk Sauce into the chicken. Cover/seal in fridge to marinate for minimum 1 hour.

In a large pot over medium heat, add the oil. When the oil is hot, not smoking, add sugar and allow it to bubble, froth, and get dark. Do not let it get black. Add the chicken and let the chicken sizzle for 1 minute, do not stir. Raise the heat to high and stir continuously for 2 mins until chicken is coated and brown.

Stir in soy sauce, thyme, tomato paste, lime juice, diced tomato, and salt/pepper to taste. Add in 125ml of water, simmer on med for 5 mins.

Over Medium heat, cook chicken covered for 15-20 mins stirring every 5 mins, until liquid has evaporated. Continue to cook for a few seconds to build flavour, stirring often to prevent the chicken from sticking.

Add 1 cup of water to create the stew sauce. Cover and cook an additional 10-14 mins to fully cook the chicken, ensure to stir gently occationally, allowing the sauce to thickened. Longer you cook the thicker the sauce and the less of it.

Taste and tweak. Add salt and pepper in pinches to get the desired taste level to your preference. Serve hot over rice, quinoa, or a steamed veggies.

Tip: For a meatless version use a plant-based "bacon" .
